This is our go to recipe for prawn rolls. It's so easy and the result is amazing.
The quantities are kind of loose, depending on how many prawns you get and if you want to stuff the rolls or keep it nice.
1kg cooked King prawns - fresh as possible / don't go frozen.
6 brioche hot dog rolls.
salt and pepper
red onion - chopped finely
celery - chopped finely
red Chilli - chopped finely
Shell the prawns and chop pretty roughly , combine the rest of the ingredients in a bowl to make the sauce. Start with the mayo and gradually add the rest - tasting as you go.
Combine the prawns and the sauce in a bowl.
Next you want to toast the rolls - cut the ends and sides off the rolls and butter the cut sides. toast in a fry pan or if you have a flat top grill on that. Don't put them in the toaster.
Next spoon the prawn mixture into the hot toasted rolls. Sprinkle with some extra chopped chilli and celery.
Then eat. Serve them with potato chips and a beer.
